I’m going to keep this short and sweet: Chef Ian Graye is a freak of nature. Besides the fact that this absolute beast of a chef doesn’t like coffee or apples (fuck off, what?) he is nonetheless one of the most exciting chefs operating in the old U S of A right now.

Haven’t heard of him? Well, maybe turn off the darn FOOD BROADCASTING CHANNEL NETWORK or whatever the heck it’s called and stop concerning yourself with TV hacks and Instagram stylists and get to know some talented sons of guns making awesome food for folks each and every night.

Pietramala was my favorite meal of 2025. I went there right after Atelier Crenn and right before Eleven Madison Park, and while the dining room wasn’t as grand, neither was the ticket. What was GRAND AS ALL GET OUT though was the immense thoughtfulness in the cuisine and the amount of flavor that man can PACK into a plate.

Watching Chef Ian on the line was an absolute joy. He’s a chef’s chef for sure, but slated for some serious celebrity in the future. Watch out for JBF awards and Michelin nods.

ANYWAY, we’re excited to be collaborating with this rare talent on November 9th for two seatings. The price listed on the ticket is for food AND service, so no need to worry about gratuity. It does not include beverage, but we’ll have many great options available including our great non-alcoholic selections.
