The Botanical Tasting Menu at Astera is a spirited, creative experience. Offered in the main dining room, the Botanical Tasting is a collaboration between Chef Aaron Adams and Chef de Cuisine Saxon Stites - two passionate and dedicated lovers of cuisine and hospitality.
We build our menu with the amazing produce from the abundance of local farms. We feel we have some of the greatest produce in the world right here in Oregon, and we’re so very proud to share with you.

The fields and forest experience
The Fields and Forest Experience offers an expanded menu based on the Botanical Tasting, with the addition of more wild foraged offerings. Offered in the main dining room, the Fields and Forest experience features additional courses over the Botanical Tasting Menu, with a focus on the wild herbs, plants, mushrooms and fruits of Oregon and Washington.

CHEF’s COUNTER EXPERIENCE
Come dine with Chef Aaron at the counter as he creates an expansive tasting menu based on the best produce from the market, his weekly foraging haul, and the fruits, herbs, and vegetables from his personal garden. At the counter you’ll be the first to try experimental new dishes, some rare finds from the fields, and some novel ferments and tastes only offered at the counter.
